Pumpkin Cake with Cream Cheese Frosting
Description
Pumpkin Cake with Cream Cheese Frosting combines eggs, sugar, vegetable oil, vanilla, and pumpkin puree with flour and pumpkin pie spice, baking powder, baking soda, and salt. The spices and pumpkin provide flavorful warmth and moistness, while the leavening agents ensure a soft, risen texture.
The cake is baked in a 9x13 dish until set and tested for doneness, then cooled completely before adding the frosting. The frosting is made by creaming room-temperature cream cheese and butter, then mixing in vanilla and powdered sugar until creamy.
Frosting the cake when fully cooled prevents melting, and the balance between the sweet powdered sugar and tangy cream cheese enhances the pumpkin spice character. The cake cuts into about 12 servings and can be garnished further with cinnamon or nuts.
Notes emphasize using any neutral oil, ensuring cream cheese is at room temperature to avoid lumps, and optional additions like cinnamon dusting or nuts on top of the frosting for added flavor and texture.
