FOR THE CHILI:

  • 1 lb. ground beef
  • 1 can pumpkin 15 oz can, puree
  • 1 can tomato sauce 29 oz can
  • 2 cans pinto beans 15 oz cans, do not drained
  • 2 cups beef broth
  • 2 Tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ onion diced
  • 1 red bell pepper diced
  • 2 teaspoons garlic minced

FOR THE TOPPINGS:

  • 1 cup sour cream
  • 2 cups cheddar cheese shredded
  • 2 jalapeños sliced

Instructions

  1. Brown the ground beef in a large stock pot or dutch oven. Drain off the excess grease.
  2. Then stir in the remaining chili ingredients. Bring the mixture to a low boil. Cover and simmer for 20-30 minutes until the flavors are incorporated and the vegetables are soft.
  3. Serve warm with your favorite chili toppings and enjoy!
