Pumpkin Chili
Description
Pumpkin Chili starts by browning ground beef and draining excess fat, then adding pumpkin puree, tomato sauce, pinto beans with their liquid, beef broth, and seasoning including chili powder, salt, pepper, onions, bell peppers, and garlic. The mixture simmers to meld flavors and soften vegetables, balancing the sweetness and earthiness of pumpkin with savory chili elements.
This chili has a thick, hearty texture from the beans and pumpkin with diced vegetables providing freshness and bite. The unique addition of pumpkin adds moisture and a mild sweetness uncommon in typical beef chili. Toppings like sour cream, shredded cheddar, and sliced jalapeños add creaminess, sharpness, and heat to customize each serving.
Serve warm as a main dish, ideal during cooler seasons when richer comfort foods are desired. The recipe is straightforward to prepare on the stovetop using a single pot, making cleanup easy.
