Pumpkin Chocolate Chip Bars

Pumpkin Chocolate Chip Bars blend moist pumpkin and warm spices with mini chocolate chips in a tender bar form. These bars bake quickly to a soft texture with a lightly spiced flavor, making them a comforting seasonal treat. They can be served warm or at room temperature for snack or dessert.

Description

This recipe creates pumpkin bars by creaming softened butter with brown sugar, then mixing in egg, vanilla, and pumpkin puree for moisture and flavor. A blend of flour, cinnamon, nutmeg, baking soda, and salt adds structure and warms the flavor profile. Mini chocolate chips folded into the batter provide chocolate bursts throughout the tender bars.

Once spread evenly in a prepared pan, the bars bake at 350 degrees Fahrenheit until a toothpick inserted comes out clean, usually between 15 to 20 minutes depending on oven temperature. Baking results in bars with a soft crumb that balance the subtle pumpkin spice and sweetness from the chips.

They can be enjoyed warm out of the oven or cooled to room temperature, making them versatile for snacks, packed lunches, or dessert. Watch baking time closely to prevent overbaking for the best soft texture.

Ingredients

Servings
  • 6 tablespoons butter softened
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup pumpkin puree
  • 7/8 cup all-purpose flour 3/4 cup + 2 tablespoons
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray 8x8 square dish with nonstick cooking spray and set aside.
  2. In a large bowl, cream butter and sugar together. Stir in egg, vanilla and pumpkin. Pour in all dry ingredients and stir until just combined. Stir in chocolate chips.
  3. Spread dough evenly into prepared baking dish. Bake 15-20 minutes or until toothpick comes out clean after being inserted. {My oven is hotter than the sun, so mine was done at 15 minutes. Keep an eye on yours!} Remove from oven, cool 5-10 minutes, cut into bars and serve warm. Or wait and serve at room temperature. But of course I can never wait.
