Pumpkin Cinnamon Roll Casserole Recipe

Report
This Pumpkin Cinnamon Roll Casserole combines canned cinnamon rolls with a pumpkin-spiced egg custard baked slowly in a crock pot. The result is a warm, soft casserole featuring the familiar swirl of cinnamon rolls infused with seasonal flavors like pumpkin, maple syrup, vanilla, and nutmeg, ideal for brunch or dessert.

Description

The recipe involves cutting canned cinnamon rolls into quarters and layering them in a greased crock pot. A mixture of eggs, canned pumpkin puree, milk, maple syrup, vanilla extract, and nutmeg is whisked and poured over the cinnamon pieces to create a rich custard base.

After cooking on low heat for two and a half to three hours, the casserole is topped with the canned icing packets—one drizzled in mid-cook and the other just before serving. This layering allows partial melting of frosting to enhance texture and sweetness.

The casserole serves well immediately hot and pairs nicely with a glass of milk. Its ease of preparation and slow cooker method make it suitable for planned brunches or holiday meals, delivering soft cinnamon rolls with a moist, lightly spiced pumpkin custard throughout.

Ingredients

Servings
  • 2 cans cinnamon rolls (any kind will do – around 12 oz.)
  • 4 egg
  • 3/4 cup pumpkin canned
  • 1/2 cup milk
  • 3 Tbsp maple syrup
  • 2 tsp vanilla
  • 1/8 tsp nutmeg

Instructions

  1. Open up the cans of cinnamon rolls and set aside the icing for later.
  2. Cut each cinnamon roll into quarters.
  3. Spray your crock pot with non stick spray and place one of the rolls of cinnamon rolls in the bottom of the crock pot.
  4. In a small bowl whisk together the eggs, pumpkin puree, milk, syrup, vanilla, and cinnamon.
  5. Pour over the cinnamon rolls in the crock pot.
  6. Place the remaining cinnamon rolls on top.
  7. Drizzle one icing packet over the cinnamon rolls.
  8. Place the crock pot lid on top and cook on low for 2½ to 3 hours.
  9. Remove lid and drizzle the last icing packet over the cinnamon rolls.
  10. Serve immediately and enjoy with a glass of milk!

Notes

  • Use any standard canned cinnamon rolls; approximately 12 ounces (two cans) is appropriate.
  • Baking time in the crock pot is around 2½ to 3 hours on low heat; adjust for your slow cooker model as needed.
  • Drizzle one icing packet halfway through cooking to allow it to melt into the casserole for flavor and texture.
  • Reserve the final icing drizzle until just before serving for a fresh, sweet topping.
  • Serve immediately for best texture and flavor, ideally with a cold beverage such as milk.
