Pumpkin Dessert Bars

Pumpkin Dessert Bars feature a layered composition with a yellow cake mix base, a spiced pumpkin custard middle, and a crumbly cake mix topping. The bars bake to a golden brown, holding a firm yet moist spiced pumpkin filling marked by cinnamon and vanilla. They provide a convenient pumpkin-flavored treat perfect for fall and holiday baking.

Description

This recipe creates dessert bars starting with a pressed yellow cake mix base slightly enriched with egg and butter. The middle layer uses canned pumpkin puree, eggs, milk, brown sugar, cinnamon, and vanilla to form a custard that sets while baking and provides warm fall flavors. The final topping combines reserved cake mix, softened butter, and sugar to form a crumbly streusel that adds texture contrast.

Once baked, the bars have a sturdy crust, a smooth and cinnamon-rich pumpkin center, and a sweet crumb topping that browns nicely. The use of yellow cake mix intensifies the buttery flavor of the crust and topping, balancing the pumpkin filling’s softness.

These bars are suitable for serving at gatherings or as a make-ahead dessert. They should be refrigerated if stored to maintain freshness due to the layers including eggs and pumpkin. Leftovers keep longer when chilled and can be sliced easily when cold.
