Pumpkin Dump Cake

Pumpkin Dump Cake combines pumpkin puree, brown sugar, eggs, and pumpkin pie spices layered with yellow cake mix and topped with butter and chopped pecans. Once baked, it yields a moist, spiced cake with a crunchy pecan topping. This dessert provides an easy way to enjoy pumpkin flavors without too much preparation.

Description

This Pumpkin Dump Cake blends the traditional flavors of pumpkin and warm spices with the convenience of a layered cake mix method. The pumpkin puree mixes with evaporated milk, eggs, brown sugar, pumpkin pie spice, and vanilla for a richly flavored base. The yellow cake mix sprinkled on top bakes into a textured crust, while small butter pieces melt over it, adding richness and helping create a slightly crisp top.

Chopped pecans scattered over the surface contribute a nutty contrast that complements the autumnal spice profile. Baking at 350°F for 50 minutes allows the cake to set with a moist interior and flavorful crust.

Using spiced cake mix instead of yellow cake mix can enhance the fall spice flavor. This cake serves well warm or cooled and pairs nicely with whipped cream or ice cream.

Ingredients

Servings
  • 1 ounce can pumpkin puree
  • 1 ounce can evaporated milk
  • 3 egg
  • 1 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 .25-ounce box yellow cake mix
  • 3/4 cup butter cut into small pieces
  • 2 ounces pecans chopped

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the pumpkin, milk, eggs, brown sugar, pumpkin pie spice, and vanilla extract. Stir until blended and pour into a 9x13-inch baking dish.
  3. Sprinkle the dry cake mix evenly over the pumpkin. Place the small pieces of butter over the cake mix, as evenly as possible (as they melt they will spread out), and sprinkle pecans over the top of the cake.
  4. Bake for 50 minutes.

Notes

  • For stronger fall spice flavor, try a spiced cake mix instead of yellow cake mix.
