Pumpkin Fruitcake

Ingredients

  • 1/3 cup butter softened, unsalted
  • 3/4 cups sugar
  • 2 large egg
  • 1/2 cup pumpkin canned
  • 1 teaspoon vanilla extract
  • 1/3 cup milk whole
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup pecans , chopped (divided)
  • 1 cup candied fruit , chopped mixed, divided

Instructions

  1. Preheat oven to 350 degrees and spray a 9x5 loaf pan with baking spray.
  2. To your stand mixer, add the butter and sugar and beat until light and fluffy.
  3. Add in eggs, pumpkin, and vanilla extract until well combined.
  4. Add milk until well combined.
  5. Sift together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  6. Add dry ingredients to stand mixer on lowest speed setting until just combined.
  7. Stir in most of the pecans and 3/4 cup mixed candied fruit.
  8. Pour into the loaf pan, top with remaining pecans and mixed candied fruit.
  9. Cook for 55-60 minutes.
  10. Cool for 10 minutes before removing from loaf pan.
