Pumpkin Fudge
Description
This Pumpkin Fudge mixes white chocolate melting wafers with condensed milk, pumpkin puree, and pumpkin spice to create a creamy, dense confection. The fudge is prepared by melting the chocolate with condensed milk in a microwave, then incorporating the pumpkin and spices for a balanced sweetness layered with autumn flavors. Chopped walnuts contribute textural contrast. After pouring the mixture into lined muffin cups, it is chilled for one to two hours until firm enough to serve.
The resulting fudge offers a smooth bite enriched by pumpkin’s subtle earthiness and the warmth of pumpkin spice. It's a sweet snack suitable for holiday gatherings or as a seasonal treat. Its portioned presentation in muffin liners makes serving easy and mess-free.
To maintain the right consistency, avoid adding excess condensed milk or pumpkin puree, which can cause the fudge to become runny. Adjust pumpkin spice to personal taste for a more pronounced flavor.
Ingredients
- 2 cups white chocolate melting wafers, 12 ounces/340 grams
- 5 tablespoons condensed milk
- 2 tablespoons pumpkin puree
- 1/2 teaspoon pumpkin spice
- 1/4 cup walnuts chopped
Optional:
- Food Coloring orange
- walnut raisins, sprinkles etc, mix ins
Instructions
- Line a regular muffin tin with paper cups, only 6 are needed. Set aside.
- Combine the chocolate and condensed milk in a large, microwave-safe bowl. Microwave in 20 seconds increments and stir after each one until the chocolate has melted. Make sure you stir well, after each interval as the residual heat will melt the chocolate without extra microwaving. This way you avoid overheating and separation of chocolate.
- Stir well until smooth, stir in pumpkin puree, walnuts, pumpkin spice, and a few drops of orange gel food color (if using).
- Pour mixture into the lined muffin cups and refrigerate for 1-2 hours.
- When the fudge has cooled off and harden it can be served.
Notes
- Do not add extra condensed milk or pumpkin puree to prevent the fudge from becoming too runny.
- Adjust the amount of pumpkin spice to enhance the autumnal flavor to your preference.
- Chopped walnuts add a crunchy texture contrast; you may substitute with other mix-ins like raisins or sprinkles.
