Pumpkin Lasagna Dessert
Description
This dessert begins with a crust made from crushed gingersnap cookies mixed with melted butter and chopped pecans, baked until set and slightly crisp. The pumpkin layer combines cream cheese, powdered sugar, canned pumpkin, brown sugar, pumpkin spice, and Cool Whip, offering a smooth, spiced filling with a light whipped texture.
On top of the pumpkin layer, a mixture of instant vanilla pudding and milk is spread to add creamy firmness, followed by a topping of remaining Cool Whip and additional chopped pecans for texture and visual appeal.
The dish is baked briefly initially only for the crust, then assembled chilled. The resulting dessert offers a balance between creamy and crunchy elements with warm spices common in pumpkin dishes, suitable for fall and holiday occasions.
