  • 1 butter stick
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 cup pumpkin about 1/2 a 15 oz can, puree
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup oatmeal
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice see notes for substitution
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips semi sweet or dark chocolate

Instructions

  1. Preheat the oven to 350.
  2. Beat the butter in a mixing bowl until light and fluffly.
  3. Add the white and brown sugar and continue to mix until well combined.
  4. Mix the pumpkin puree and vanilla into the bowl and beat for 2 minutes.
  5. Mix the flour, oatmeal, baking soda, pumpkin pie spice and salt together in a small bowl.
  6. Add the flour mixture and mix until just combined. The batter will be wetter than standard chocolate chip cookie batter.
  7. Stir in the chocolate chips.
  8. Drop by rounded spoonfuls onto ungreased cookie sheet, and bake for 10-12 minutes. Bake longer for a crispier cookie.

Notes

  • Substitute pumpkin pie spice with 1 1/2 teaspoons cinnamon and 1/2 teaspoon nutmeg if needed.
