Ingredients
- 1 butter stick
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 cup pumpkin about 1/2 a 15 oz can, puree
- 1 teaspoon vanilla
- 1 cup flour
- 1 cup oatmeal
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice see notes for substitution
- 1/2 teaspoon salt
- 3/4 cup chocolate chips semi sweet or dark chocolate
Instructions
- Preheat the oven to 350.
- Beat the butter in a mixing bowl until light and fluffly.
- Add the white and brown sugar and continue to mix until well combined.
- Mix the pumpkin puree and vanilla into the bowl and beat for 2 minutes.
- Mix the flour, oatmeal, baking soda, pumpkin pie spice and salt together in a small bowl.
- Add the flour mixture and mix until just combined. The batter will be wetter than standard chocolate chip cookie batter.
- Stir in the chocolate chips.
- Drop by rounded spoonfuls onto ungreased cookie sheet, and bake for 10-12 minutes. Bake longer for a crispier cookie.
Notes
- Substitute pumpkin pie spice with 1 1/2 teaspoons cinnamon and 1/2 teaspoon nutmeg if needed.
