Description
The cookies start by creaming softened butter with brown and white sugars, creating a smooth, sweet base. Adding pumpkin puree, egg, and vanilla results in a moist batter. Dry ingredients including all-purpose flour, quick oats, cinnamon, baking soda, baking powder, and salt are mixed separately and folded in to provide structure and flavor. Chocolate chips are folded in last to distribute pockets of sweetness.
Baked at 375 degrees Fahrenheit for 11 to 15 minutes, the cookies turn golden with slightly crisp edges and a tender center. The pumpkin adds moisture and depth, while oats contribute chew and body. Cinnamon provides a subtle warm spice note throughout.
These cookies work well as a seasonally inspired treat for sharing or for enjoying alongside a cup of tea or coffee. They store well at room temperature for several days.
Ingredients
- 1 1/2 cups butter softened
- 2 cups brown sugar packed
- 1 cup sugar
- 1 (15 ounce) can pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 2 cups oats quick cooking
- 1 tablespoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups chocolate chips half semi-sweet/half milk chocolate
Instructions
- Preheat oven to 375 degrees F.
- In a medium bowl, beat together butter and sugars until creamy. Add pumpkin, egg and vanilla and beat until smooth.
- In another bowl, mix together the dry ingredients flour, oats, cinnamon, baking soda, baking powder and salt.
- Add dry ingredients to the wet ingredients and stir until combined. Fold in chocolate chips.
- Use a cookie scoop to scoop onto a lightly greased cookie sheet.
- Bake for 11-15 minutes.
NOTE:
- Once out of the oven, round out cookies with back end of spatula and add a few extra chips on top.
