  • 3/4 cup butter softened
  • 1 cup brown sugar packed
  • 1 cup white sugar
  • 1 (15 ounce) pumpkin puree canned
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup oats quick cooking
  • 1/2 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract pure
  • 1/4 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, beat together butter and sugars until creamy. Add pumpkin, egg and vanilla and beat until smooth.
  3. In another bowl mix together the dry ingredients - flour, oats, cinnamon, baking soda, baking powder and salt.
  4. Add dry ingredients to wet ingredients and stir until combined.
  5. Use a medium cookie scoop to scoop onto a lightly greased cookie sheet. Bake for 11-14 minutes.
  6. Once cookies are cool, make glaze by whisking together powdered sugar, milk, vanilla and pumpkin pie spice and drizzle over cookies. Let set before transporting or serving.
