Pumpkin Pecan Pie Bars

These pumpkin pie bars are topped with a crunchy pecan topping! The base is made from oatmeal and the filling is like a perfectly creamy pumpkin pie!

Ingredients

  • 1 cup flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar packed
  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 15 ounce pumpkin puree canned
  • 12 ounces evaporated milk
  • 2 large egg
  • 2 1/4 teaspoons pumpkin pie spice
  • 1/2 cup pecans chopped
  • 1/4 cup brown sugar packed
  • Whipped Cream for serving

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine flour, oats, brown sugar, and butter in a medium bowl. Beat on low for 2 minutes or until crumbly.
  3. Press the mixture into an ungreased 9x13 baking dish. Bake for 15 minutes.
  4. Combine sugar, pumpkin, evaporated milk, eggs, and pumpkin pie spice in a large bow and beat on medium speed for 1-2 minutes.
  5. Pour over crust. Bake for 20 minutes.
  6. Combine pecans and brown sugar and sprinkle over the pumpkin.
  7. Continue baking for 15-20 minutes or until a knife inserted in the center comes out clean.
  8. Cool completely and cut into bars.
