Pumpkin Popsicles

Craving a healthy snack that's out of the ordinary?  Try these Pumpkin Popsicles with only a few ingredients.  They are drizzled with a sweet chocolate sauce that really takes them over the top.  {gluten free}

Ingredients

  • 1 cup pumpkin puree
  • 1 ½ cups yogurt plain, Greek
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 5 tablespoon pure maple syrup
  • 5 tablespoon chocolate melted, Lily's or Enjoy Life brand
  • 1 tablespoon coconut oil

Instructions

  1. Mix the pumpkin, yogurt, cinnamon, Rodelle Vanilla Extract, and maple syrup in a medium-sized bowl.
  2. Carefully spoon the yogurt mixture into your popsicle molds and place a popsicle stick in each mold.
  3. Freeze for at least 6 hours or overnight.
  4. When ready to unmold melt the chocolate and coconut oil in a microwave safe bowl in 30 second increments, stirring each time.
  5. Unmold popsicles and lay them on parchment paper. Using a spoon, drizzle generously with the chocolate. It should set up quickly. Wrap in plastic wrap when storing in freezer.

Notes

  • Use dairy-free yogurt for a dairy-free popsicle.  
  • Wrap well in plastic wrap or store in freezer bags for a few days in the freezer.  Best eaten within a day or two.
