Pumpkin Pretzel Bites

Pumpkin Pretzel Bites are soft biscuit dough pieces coated with a warm baking soda solution and baked until golden, then tossed in a buttery pumpkin spice and sugar mixture. These bite-sized treats have a chewy pretzel-like exterior and a sweet, warmly spiced coating that highlights pumpkin pie flavors.

Description

This recipe transforms canned biscuit dough into small pretzel bites by cutting the dough into pieces and briefly dipping them in a baking soda and water solution before baking at high heat. The baking soda bath gives the bites a characteristic pretzel texture and golden crust. After baking, they are brushed with melted butter and coated in a mixture of granulated sugar, brown sugar, and pumpkin spice.

The resulting bites are warm, slightly chewy with a crisp browned exterior typical of pretzels, but carry the sweet, aromatic flavor of pumpkin spice. Their small size makes them ideal for snacking or serving as a seasonal treat. They are best served warm or at room temperature.
