Description
This recipe transforms canned biscuit dough into small pretzel bites by cutting the dough into pieces and briefly dipping them in a baking soda and water solution before baking at high heat. The baking soda bath gives the bites a characteristic pretzel texture and golden crust. After baking, they are brushed with melted butter and coated in a mixture of granulated sugar, brown sugar, and pumpkin spice.
The resulting bites are warm, slightly chewy with a crisp browned exterior typical of pretzels, but carry the sweet, aromatic flavor of pumpkin spice. Their small size makes them ideal for snacking or serving as a seasonal treat. They are best served warm or at room temperature.
Ingredients
- 1 biscuit dough refrigerated, canned
- 2 tablespoons baking soda
- 1 1/2 cups water warm
- 1/2 cup butter divided, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons pumpkin spice
Instructions
- Preheat oven to 400 degrees F.
- Line a large baking sheet with parchment paper.
- Cut each biscuit into six pieces and roll them into small, arrange them on the baking sheet.
- Fill a shallow bowl with the warm water and add baking soda to it. Whisk until the baking soda is dissolved.
- Use a pastry brush to brush the solution onto the dough balls. Wait for the dough to dry slightly, about 3-5 minutes, then brush with about 2-3 tablespoons of melted butter.
- Bake until golden, 10 to 12 minutes. Let cool slightly.
- Whisk together sugars and pumpkin spice in a medium bowl.
- Toss the slightly cooled pretzels in the remaining melted butter then toss in the pumpkin spice and sugar mixture.
- Serve warm or at room temperature.
