Pumpkin Pudding

These easy and quick pumpkin pudding cups taste just like creamy pumpkin pie but layered into individual parfaits. This makes an easy pumpkin spice treat the whole family will love!

Ingredients

  • 5.1 ounces vanilla pudding mix instant pudding
  • 12 ounces evaporated milk canned
  • 15 ounces pumpkin puree
  • 1 teaspoon pumpkin pie spice plus extra for garnish
  • 2 cups whipped topping like Cool Whip, plus extra for garnish
  • 1 cup cinnamon graham crackers crushed

Instructions

  1. Place the instant vanilla pudding mix, evaporated milk and pumpkin puree in a large mixing bowl. With an electric mixer blend until smooth.
  2. Add the pumpkin pie spice into the pumpkin mixture and mix until smooth with the electric mixer.
  3. Place the whipped topping in with the pudding mixture. Mix the whipped topping into the pudding mixture until just mixed.
  4. Split the graham crackers in half. Layer half of the graham cracker crumbs into the bottom of four glasses, followed by dividing half of the pumpkin pudding evenly between the four glasses. Repeat with the rest of the graham crackers and pudding.
  5. Refrigerate until ready to serve or at least 10 minutes. When serving, add a dollop of whipped cream and a sprinkle of pumpkin pie spice if desired. Enjoy!

Notes

  • If you use canned pumpkin pie filling instead of just pumpkin, the pudding will be too sweet.
