Pumpkin Rice Krispie Recipe
Description
The recipe starts by melting butter and combining it with mini marshmallows and orange gel food coloring for a vibrant pumpkin hue. The melted marshmallow mixture is stirred thoroughly with crisp rice cereal, coating all pieces well. Once slightly cooled but still pliable, the mixture is shaped into balls roughly the size of baseballs.
Each pumpkin-shaped treat is topped with half a tootsie roll stick to resemble a stem, and green frosting is used to pipe leaves around the top, completing the pumpkin effect. The treats firm up as they cool, making them easy to handle and serve. This preparation requires no baking, making it approachable and kid-friendly.
This pumpkin design makes a seasonal twist on classic Rice Krispie treats, a sweet and chewy snack that balances marshmallow softness with cereal crispness. They can be enjoyed as party treats or fun fall snacks and bring a festive, colorful touch to dessert tables. Adjusting the orange coloring and decorations can customize appearance. Wearing gloves or using wax paper helps in shaping without sticking.
Ingredients
- 3 tablespoons butter salted
- 10 ounces mini marshmallows
- Food Coloring orange gel
- 6 cups rice krispie cereal
- 5 tootsie roll cut in half to total 10, small
- green frosting , for leaves
Instructions
- In a medium saucepan melt the butter. Add the marshmallows and 5-6 drops of the orange food coloring. Continue to stir until the mixture is smooth and melted.
- Remove from the heat and stir in the Rice Krispie cereal until fully coated. Or pour the melted marshmallows over the cereal and large mixing bowl.
- Allow the mixture to cool for about 5 minutes, or until it is cool enough to handle while wearing gloves, but not so cool it has hardened. Although I highly recommend wearing powder-free latex gloves, you can also use wax paper to mold the warm mixture into round balls about the size of a baseball.
- While still warm and soft, push a half of a tootsie roll into the top for the stem. .
- Allow pumpkins to cool completely, then decorate with green frosting for leaves.

Notes
- To make the peanut butter version, add 1/4 cup peanut butter with the marshmallows and reduce marshmallows by 1/4 cup while mixing until smooth.
- Use powder-free latex gloves or wax paper to shape the pumpkin treats to avoid sticking and keep hands clean.
- These treats are best served after they have fully cooled and set to maintain shape.
