The dough is hand-rolled into small balls, shaped like mini pumpkins with subtle ridges, using toothpicks or string for detail. The gnocchi are boiled until they float, resulting in tender dumplings with a mild pumpkin flavor and a creamy, cheesy bite.

Description

This recipe starts by draining excess liquid from pumpkin puree for a firmer dough, then mixing it thoroughly with flour, Parmesan cheese, ricotta cheese, egg, and seasonings including salt, pepper, and freshly grated nutmeg. The dough should be soft but manageable; additional flour is added if it’s too sticky.

Each portion of dough is rolled into balls and then shaped with a toothpick or kitchen string to mimic pumpkin ridges and a slightly flattened top, giving an aesthetic reminiscent of small pumpkins. The shaped gnocchi cook in salted boiling water, and when they rise to the surface, they are ready to be removed gently to prevent breaking.

The finished gnocchi offer a tender, pillowy texture enriched by the Parmesan and ricotta, with seasonal warmth from the pumpkin and nutmeg. They can be served with simple butter sauces or other light accompaniments that let the pumpkin flavor come through.

Ingredients

  • 8 ounces pumpkin puree
  • 1 cup all-purpose flour
  • 1/2 cup Parmesan Cheese grated
  • 1/2 cup ricotta cheese
  • 1 egg large
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg freshly grated
  • clove to help mimic pumpkin stems, whole
  • Toothpicks or food safe string for shaping

Instructions

  1. Prepare the pumpkin by draining some of the liquid out. To do this line a bowl or a strainer with a few layers of paper towels, then place the pumpkin puree on top of the paper towels. Let this sit for 10 minutes.
  2. Gently mix together all of the ingredients in a large bowl. A soft but pliable dough will form, if the dough is too wet or sticky, add additional flour as needed 1 tablespoon at a time.
  3. Sprinkle a little flour on a clean countertop or cutting board.
  4. Taking about 1 1ablespoon of dough at a time, roll the dough between your palms to create a ball shape, set the ball onto your floured surface. Repeat this until all the dough has been rolled.
  5. Fill a large pot with water and bring to a boil, season the water with a pinch of kosher salt.
  6. Using the side of a toothpick or a piece of string to create pumpkin markings on each dough ball, then very gently press down the top just a bit to make the ball a little more squat in shape.
  7. Once all of the gnocchi are shaped and the water is boiling, carefully slide them into the pot of water.
  8. Let the gnocchi boil until they begin to float, once they are floating give them another minute or two then take them out of the water.
  9. Place a whole clove into the top of each gnocchi to look like a pumpkin stem. 
  10. Serve gnocchi with your favorite sauce! (it is recommended to remove the clove before eating.)
