Pumpkin Shortbread Bars
Description
This dessert starts with a traditional shortbread crust combining flour, sugar, butter, vanilla, and salt pressed into a pan. The pumpkin filling blends pumpkin pureé with brown sugar, cinnamon, nutmeg, and flour to thicken, then is spread evenly over the base. Generous toppings of semisweet chocolate chips and toasted walnuts are gently pressed into the filling before drizzling caramel sauce on top.
Baking at 325°F for 45 to 60 minutes allows the pumpkin layer to firm up without overbaking the shortbread. After cooling completely, the bars are cut into 16 pieces, balancing the buttery crust, spiced pumpkin, nutty crunch, and sweet caramel. Serving chilled is optional but recommended for a different texture experience.
Ingredients
for the shortbread base-
- 1 1/4 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1/2 cup butter softened
- dash salt
- 1/2 teaspoon vanilla extract
for the pumpkin filling-
- 1 1/2 cups pumpkin pure
- 1/2 cup brown sugar packed
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup all-purpose flour
for the toppings-
- 1/3 cup chocolate chips semi-sweet
- 1/3 cup walnuts toasted & chopped
- 1/4 cup caramel sauce store bought or homemade
Instructions
- Preheat oven to 325° F. Line an 8x8 square dish with parchment paper or foil and spray lightly with cooking spray. Set aside.
- In a large bowl, combine all ingredients for shortbread until moist. Press evenly into bottom of prepared pan. Set aside.
- In a different large bowl, whisk together ingredients for pumpkin filling. Stir until smooth.
- Pour over shortbread and smooth the top.
- Sprinkle nuts and chocolate chips over top and press lightly into filling.
- Drizzle caramel sauce over top of entire dessert.
- Bake 45 minutes to an hour or until pumpkin filling has set.
- Cool completely before removing. Cut into 16 equal squares and serve.
Notes
- These bars can be served chilled, which firms up the filling and enhances flavors.
