Ingredients
- 1 cup water
- 1 cup brown sugar
- 1/3 cup pumpkin puree
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla
- cinnamon stick optional

Instructions
- Add everything but vanilla extract into a small sauce pan. Whisk to combine and heat over medium heat until simmering. Let simmer for 2 minutes.
- Remove from heat and stir in vanilla. Pour through a fine mesh strainer into a bowl. Let cool completely at room temperature.
- Add to a glass jar and store in the fridge.
Notes
- Don't let the mixture come to a rolling boil, just heat it up enough to simmer.
- Don't skip the cooling step! If you add the hot syrup to a glass jar, then the glass might crack.
- You can use sugar alternatives like monk fruit or coconut sugar if desired.
