Description
These cookies start with a creamed mixture of butter, pumpkin puree, sugar, eggs, vanilla, and milk for a moist base. Dry ingredients including flour, pumpkin pie spice, baking powder, and salt are combined separately and then mixed into the wet ingredients to form a balanced dough. The dough is portioned onto parchment-lined baking sheets, spaced apart, and optionally sprinkled with a cinnamon-sugar topping before baking at 375°F for 10 to 12 minutes. The result is softly textured cookies with golden edges.

Ingredients
- 1/2 cup butter
- 1/2 cup pumpkin
- 2 cups sugar
- 2 large egg
- 2 Tablespoons milk
- 1 teaspoon vanilla
- 3 cups flour
- 1 Tablespoon pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar Optional, mixed together, 1 teaspoon cinnamon
- 1 cup cinnamon Optional, mixed together, 1 teaspoon cinnamon
Instructions
- In the mixing bowl of a stand mixer, place the butter, pumpkin, sugar, eggs, vanilla, and milk, and blend until smooth and creamy.
- In a separate bowl, mix the flour, pumpkin pie spice, baking powder, and salt, until well blended.
- Add the flour mixture to the mixing bowl, and mix on low until the ingredients are blended.
- Scrape down the sides of the bowl, and mix again.
- Line 2 cookie sheets with Parchment paper, and drop the cookies by the Tablespoonful onto the Parchment paper about 2 inches apart.
- Sprinkle the tops with the cinnamon-sugar mixture if desired.
- Bake the cookies at 375 for 10 -12 minutes, or until cookies are golden brown.
- Remove cookies from oven to a wire rack to cool. Serve and Enjoy!
