Queso Fresco Stuffed Tomatoes
Description
This recipe uses ripe, medium-sized tomatoes with the pulp carefully removed, creating a cavity for the filling. The filling blends queso fresco cheese with finely chopped red onion and chopped cilantro, seasoned simply with salt and black pepper. Each tomato is filled with one quarter of this mixture and placed on a baking dish.
Placed about six inches under a preheated broiler, the tomatoes cook just long enough—4 to 5 minutes—to soften the tomato walls slightly and melt the cheese topping, creating a warm and creamy texture. This method keeps the tomatoes intact but tender and allows the cheese to meld with the fresh herbs for a clean, mildly tangy flavor.
These stuffed tomatoes can be served immediately as a light appetizer or side. Their simplicity emphasizes fresh ingredients and balanced seasoning, making them suitable for pairing with grilled meats or as part of a summer meal. The preparation is straightforward and quick.
