Quiche Florentine Recipe

The Quiche Florentine Recipe features a flaky 9-inch pie crust filled with sautéed spinach, onions, and garlic, combined with a rich custard made from eggs and heavy cream, seasoned with salt, pepper, paprika, and nutmeg. Gruyere cheese adds a nutty, creamy dimension, baked until just set with a slight jiggle in the center, resulting in a silky, tender texture and a balanced savory flavor.

Description

This Quiche Florentine starts with a par-baked pie crust to ensure a crisp base. The filling consists of sweet sautéed onions, fragrant garlic, and fresh spinach cooked down to tenderness. The custard is prepared by whisking together eggs, heavy cream, and a blend of salt, black pepper, paprika, and nutmeg to add subtle depth without overpowering the spinach and cheese. Gruyere cheese, known for its mild nuttiness and meltability, is stirred into the filling and layered within the crust to create a creamy yet structured interior.

Baked at 375°F for about 40-45 minutes until the center barely jiggles, the quiche sets up with a smooth and tender consistency that's not dry. Resting before slicing allows the filling to firm slightly and makes serving easier. This dish works well as a main for brunch, lunch, or a light dinner and pairs nicely with salads or simple side dishes.

Ingredients

Servings
  • 1 9- inch pie crust homemade or store-bought
  • 2 Tbsp. butter or oil
  • ½ sweet onion finely diced
  • 2 cloves garlic
  • 4-5 cups spinach fresh, coarsely chopped
  • 4 egg large
  • 1 ¼ cups heavy cream
  • ¾ tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. paprika
  • tsp. nutmeg
  • 1 cup gruyere cheese shredded, or swiss cheese
  • parsley optional, fresh

Instructions

  1. Preheat the oven to 375 degrees.
  2. Place and shape the pie crust into a 9-inch pie dish and crimp the edges. Poke holes into the bottom using the tines of a fork. Place a piece of parchment paper into the pie crust and fill with either pie weights or dried beans. Par-bake the crust for 15 minutes.
  3. Add the butter to a large skillet over medium heat. Once melted, add the onion and saute for 3-4 minutes, or until translucent. Mix in the garlic and continue cooking for another 30 seconds, or until fragrant. Add spinach and saute for 2-3 minutes more, or until wilted.
  4. Whisk together the eggs, cream, salt, pepper, paprika, and nutmeg in a large bowl.
  5. Sprinkle ¾ cup of the cheese into the bottom of the par-baked pie crust, then add the spinach, pour in the eggs, and sprinkle with the remaining cheese. Mix everything together lightly using a fork.
  6. Bake at 375 for 40-45 minutes or until the center just barely jiggles.
  7. Allow to rest for 10-20 minutes before slicing in and serving with fresh parsley, if desired.
