Quick and Easy Asian Seared Pork Chops

Quick and Easy Asian Seared Pork Chops feature center-cut pork chops marinated in a mixture of soy sauce, Shaoxing wine, sesame oil, and spices. The marinade imparts umami and aromatic flavor, while a quick sear locks in juices producing a savory, caramelized crust. The pork chops remain tender and flavorful, perfect for a straightforward dinner.

Description

This recipe involves marinating center-cut pork chops in an Asian-inspired blend containing soy sauce, white pepper, sesame oil, cornstarch, five-spice powder, and Shaoxing wine. The cornstarch helps create a slight glaze when seared. Marinating between 20 minutes and an hour allows the flavors to penetrate the meat without being overpowering.

After marinating, the pork chops are seared in vegetable oil over medium-high heat until cooked through, creating a browned exterior that seals in moisture. The cooking time is approximately 5 minutes per side for one-inch thick chops, targeting an internal temperature of 165°F for safety and tenderness.

Resting the meat briefly after cooking allows juices to redistribute, resulting in a juicy bite. These pork chops pair well with steamed vegetables or rice to complement the savory Asian flavors.

Ingredients

Servings
  • 1/4 cup soy sauce (preferably low sodium)
  • 1/4 teaspoon white pepper
  • 1 teaspoon sesame oil
  • 1 1/2 teaspoons cornstarch
  • 1/4 teaspoon five spice powder
  • 1 tablespoon Shaoxing wine
  • 2 pork chops about 1-inch thick, 10-12 ounces/280-340g, center cut
  • 2 tablespoons vegetable oil

Instructions

  1. Combine all ingredients from the soy sauce to the wine in a shallow dish. Marinate the pork chops in this mixture for 20 minutes to an hour.
  2. Heat 2 tablespoons of vegetable oil in a large skillet. Sear the pork chops on both sides until cooked through (you can discard any leftover marinade). It should take 5 minutes per side for 1-inch thick pork chops, as long as they were at room temperature when you started cooking them.
  3. Allow to cool for 5 minutes. Enjoy!
