Quick and Easy Broiled Steak With Mustard Sauce

This broiled top sirloin steak is seasoned simply with salt and pepper, then cooked under high heat until it reaches the desired doneness. The accompanying mustard sauce combines sautéed mushrooms, green onions, garlic, beef broth, sour cream, and Dijon mustard, simmered and reduced to a creamy accompaniment. The robust sauce adds depth to the straightforward steak, which pairs nicely with steamed green beans for a balanced meal.

Description

The Quick and Easy Broiled Steak With Mustard Sauce recipe features a top sirloin steak prepared by scoring shallow cuts on both sides and seasoning generously with salt and freshly ground black pepper. Broiling the steak on high heat for 4 to 6 minutes per side cooks it evenly and forms a lightly charred exterior while maintaining juiciness inside.

The mustard sauce is created by sautéing button mushrooms, sliced green onions, and minced garlic until the mushrooms brown. After transferring the vegetables out, beef broth is simmered in the pan to reduce by half, then sour cream and Dijon mustard are whisked in to form a creamy, tangy sauce. This sauce enriches the steak, providing a balancing sharpness and earthiness from the mushrooms.

Serving the steak with steamed green beans offers a fresh, crisp contrast to the rich sauce and meat. The steak is rested tented with foil before slicing across the grain to ensure tenderness.

The recipe notes mention that button mushrooms are preferred but can be swapped for other varieties. Doubling the recipe is possible with extended broth reduction time.

Ingredients

Servings

Steak

  • 10 ounces top sirloin
  • black pepper freshly ground
  • salt

Mustard Sauce

  • 1 cup mushrooms sliced
  • 1 green onion thinly sliced
  • 1 clove garlic diced
  • 1 cup beef broth
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard

Serve With

  • green beans steamed

Instructions

Steak

  1. Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
  2. Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
  3. Sprinkle both sides generously with freshly cracked pepper and salt.
  4. Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.

Sauce

  1. While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
  2. Transfer vegetables to a plate and return pan to heat.
  3. Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. Add salt and pepper to taste (if you use full-sodium beef broth, you probably wont need salt). If not ready to serve, you can keep the mixture warm over very low heat--do not boil.
  4. Serve steak alongside steamed green beans, with mustard sauce spooned over both. Enjoy!

Notes

  • You can substitute button mushrooms with other types to vary the sauce flavor.
  • Doubling the recipe requires no changes except allowing more time for the broth to reduce by half during sauce preparation.
