Quick and Easy Chicken Burritos
Description
This recipe for Quick and Easy Chicken Burritos utilizes shredded cooked chicken mixed with melted cheese, diced avocado for creaminess, and fresh cilantro for a herbaceous note. The mixture is divided among large flour tortillas which are rolled and sealed. Cooking in a lightly oiled pan crisps and heats the tortillas, warming the filling and melting the cheese just slightly. This method yields burritos with a golden exterior and soft, flavorful filling.
The inclusion of avocado adds a fresh, creamy texture that complements the savory chicken and smooth melted cheese blend. The cilantro introduces a fresh, bright aromatic layer. The burritos are cooked on both sides to achieve even browning and are served warm.
They freeze well either cooked or uncooked for up to three months, offering convenience for make-ahead meals. Reheating cooked burritos in a pan will refresh their crispness.
