Quick and Easy Flaky Pie Crust

Layers of wafer-thin, crispy flakes are what makes a flaky pastry. And making a Flaky Pie Crust usually takes a lot of time and effort. So if you are short of time and looking for a short-cut then here is one. Perfect for meat pies, fruit and berry pies, and quiche.

Ingredients

  • 2 ½ cups flour - sifter
  • 1 teaspoon salt
  • 1 cup lard cut into pieces and chilled, or shortening or butter
  • 6 tablespoons water optional) - with 1 tablespoon lemon juice or apple cider vinegar, ice

Instructions

  1. Sift flour and salt, cut in chilled lard with a knife until particles are like small peas, not too small or the crust will be crumbly.
  2. Gradually sprinkle the ice-cold water, while tossing lightly with a fork, to form a ball.
  3. Chill to make for easier handling and give the fat time to firm up again before rolling. Divide into equal parts and roll into 2 crusts.
  4. Bake pies with custard or uncooked fruit filling in a hot oven, 425°F/220°C for 10 minutes then reduce heat to 350°F/175°C or as required by the recipe for your pie.
