Description
In this recipe, sliced shiitake mushrooms are quickly stir-fried in vegetable oil to soften and bring out their umami. Adding chopped kimchi creates a base of fermented tang and spice, which is enhanced by cooking together briefly. The broth combines kimchi juice for acidity, chicken stock for depth, Korean red chili pepper powder (gochugaru) for a mild heat, and a touch of sugar and sesame oil for rounded flavor. The broth simmers gently for five minutes to meld the ingredients.
Instant noodles are cooked separately and drained before being placed in a bowl. Pouring the hot kimchi broth over the noodles finishes the dish, with julienned scallions added as garnish for freshness and crunch. Optionally, noodles can be boiled directly in the broth for enhanced noodle flavor and convenience.

Ingredients
- 1 tablespoon vegetable oil
- 5 shiitake mushrooms (thinly sliced)
- ½ cup kimchi chopped, cabbage
- ¼ cup kimchi juice
- 2 1/2 cups chicken stock or vegetable stock
- 2 teaspoons Korean red chili pepper powder gochugaru
- ¼ teaspoon sugar
- 1 teaspoon sesame oil
- 1 instant noodles package
- 1 scallion (julienned)
Instructions
- In a medium pot, add the vegetable oil and the mushrooms. Stir-fry for 3 minutes. Add the kimchi and stir-fry for another 2 minutes.
- Add the kimchi juice, stock, korean red pepper powder, sugar, and sesame oil. Bring to a boil and simmer for 5 minutes.
- Meanwhile, open up your package of instant noodles. Discard the flavor packet, and boil the noodles according to the package instructions. Transfer the cooked noodles to a bowl. Pour your broth over the noodles, and serve with scallions on top!
- Note: If you prefer, you can also boil the noodles directly in the pot of broth!
