Quick Chicken Burrito Bowl Recipe with Cilantro Dressing

Ingredients

  • 1 cup brown rice cooked
  • 8 ounces chicken breast rotisserie, chopped, skinless, about 2 cups
  • 1 cup black beans rinsed & drained, canned, reduced sodium
  • 2 tomato diced
  • ½ avocado chopped, Hass variety
  • ¼ cup queso fresco crumbled

The Dressing:

  • ¼ cup lime juice fresh
  • ¼ cup cilantro minced
  • 3 tablespoons extra virgin olive oil
  • 1 garlic grated, clove
  • 2 teaspoons agave nectar or honey
  • ½ teaspoons cumin ground
  • ¼ teaspoons salt

Instructions

  1. Divide the brown rice, chicken, black beans, tomatoes, avocado and queso fresco between 4 bowls. Drizzled each portion with the dressing. Serve.
