Description

The recipe starts by marinating the chicken slices briefly in soy sauce, cornstarch, and water, helping them stay tender when cooked. Fresh chow mein noodles are quickly soaked in hot water just until loosened to prevent mushiness. The chicken is pan-fried until mostly cooked, then vegetables including carrots, celery, and cabbage are added to wilt and soften slightly.

Noodles are then stir-fried in the pan with the prepared sauce which includes a combination of regular and dark soy sauce, oyster sauce, Shaoxing wine (or substitutes), sesame oil, sugar, white pepper, and chicken stock. Mix-ins like garlic and cornstarch ensure the sauce thickens and coats all ingredients evenly.   • 1 lb Chow Mein noodles fresh kind
  • 1 lb chicken thigh thinly sliced, skinless, boneless
  • 2 cups mung bean sprouts washed and strained, or soy bean sprouts
  • 2 cups cabbage thinly sliced
  • 1 cup celery thinly sliced
  • 1 cup carrot julienned
  • 2 green onion chopped into 1-inch pieces
  • 2 teaspoon vegetable oil or any neutral tasting oil

Noodle Sauce

  • 2 tablespoon soy sauce regular
  • 1 tablespoon dark soy sauce
  • 3 tablespoon oyster sauce or vegetarian stir fry sauce
  • 2 tablespoon Shaoxing wine or Dry Sherry wine or chicken stock
  • 2 teaspoon sesame oil
  • 1 teaspoon granulated sugar white
  • ¼ teaspoon white pepper or black pepper
  • 2 teaspoon cornstarch or potato starch
  • 4 cloves garlic thinly sliced
  • ½ cup chicken stock low-sodium

Chicken Marinade

  • 2 teaspoon soy sauce regular
  • 1 teaspoon cornstarch or potato starch
  • 2 teaspoon water cold

Instructions

  1. Marinate sliced chicken with marinade ingredients as listed above for 10 minutes.
  2. In a small bowl, combine noodle sauce ingredients as listed above and set aside.
  3. In a large bowl or large pan, soak chow mein noodles in hot boiling water for 10-15 seconds or JUST until loosened.  Strain the noodles.
  4. Heat 1 teaspoon or 5 ml vegetable oil on medium-high heat. Fry chicken until 75% cooked.
  5. Then toss in carrots, celery, cabbage and fry until softened. Push everything to the side of the pan.
  6. Add remaining vegetable oil into the empty space. Toss in noodles with noodle sauce. Stir fry until noodles are coated in sauce, about 30 seconds. Toss in bean sprouts and green onions. Fry for 10 seconds. Serve and enjoy!
