Quick & Easy Dry Wonton Noodles
Description
This recipe contrasts fresh egg wonton noodles and filled wontons, both cooked separately in boiling water to achieve ideal tenderness. Bok choy is blanched quickly, ensuring it retains vibrant color and a crisp-tender texture. The sauce combines typical Chinese condiments and a small amount of sugar, balancing savory with mild sweetness and heat from chili oil. The addition of minced garlic adds aromatic depth.
After cooking, the noodles are transferred to a large bowl, tossed with the sauce to coat evenly without overcooking, and then divided into bowls with wontons and bok choy. Garnishes like finely chopped green onion and optional extra chili oil enhance fresh flavor and a little heat.
This approach makes a satisfying noodle meal with harmonious flavors and textures, suitable for a quick and balanced lunch or dinner.
Ingredients
- 1 lb egg noodles fresh kind, wonton variety
- 20 wontons store-bought or homemade, add more if needed
- 4 cups baby bok choy sliced into half and washed
- 1 green onion finely chopped for garnishing
Noodle Sauce
- 1.5 tablespoon oyster sauce or vegetarian stir fry sauce
- 1 tablespoon soy sauce regular
- 1 tablespoon Chili oil Chinese style
- 1 tablespoon sesame oil
- 1 garlic finely minced, clove
- 1 teaspoon granulated sugar white
- 3.5 tablespoon water boiling hot
Instructions
- In a large pot filled with enough water, bring it to a boil on high heat. Blanch the bok choy for 1-2 minutes until softened and vibrant green. Strain in a colander and divide between four serving bowls.
- In the same pot with filled with enough fresh water, bring it to a boil on high heat. Reduce to medium heat and boil wontons for 5-7 minutes or until wontons float to the top. Strain and divide between the bowls.
- In a small bowl, combine the noodle sauce ingredients as listed above and set aside.
- Then in the same pot filled with water, bring to a boil on high heat. Loosen the wonton egg noodles with your hands, before lowering them into the boiling water. Blanch noodles for 15-20 seconds or until loosened and strain. Do not over blanch!
- Transfer the hot noodles to a large mixing bowl and mix in the noodle sauce.
- Divide the seasoned noodles between the serving bowls. Garnish with green onions and more chili oil if you wish!
