Description

This fried rice begins by breaking up cold cooked jasmine rice to prevent clumping. Eggs are beaten with sesame oil and soy sauce then scrambled separately to maintain texture. Smoked tofu is diced and fried till browned edges add flavor contrast. Vegetables including onion, peas, carrots, and garlic are sautéed until softened, providing sweetness and aromatic base notes.

The rice is then added back to the pan with vegetable oil, soy sauces, sesame oil, and butter which coats the grains giving a glossy appearance and a deepened flavor. The cooked eggs and tofu are folded back in, and final seasoning with salt and pepper adjusts the taste. This method preserves distinct pieces and avoids mushiness commonly found in less careful stir-fries.

  • 2 cups jasmine rice cold day-old rice recommended, cooked
  • 2 large egg
  • 3.5 oz smoked tofu or extra-firm tofu diced and evenly seasoned with salt, black pepper and garlic powder
  • ¼ cup pea frozen kind, rinsed with water and strained
  • ¼ cup carrot diced frozen kind, rinsed with water and strained
  • ¼ cup onion finely diced
  • 2 cloves garlic minced
  • 2 tablespoon vegetable oil or any neutral oil
  • 1 tablespoon butter or sub with dairy-free butter, unsalted
  • 1.5 tablespoon soy sauce regular
  • 1 tablespoon dark soy sauce
  • 2 teaspoon sesame oil
  • salt to taste if needed
  • black pepper to taste if needed

Instructions

  1. Break up cold cooked rice with clean hands or a rice paddle and set aside.
  2. Dice tofu into ½-inch cubes and set aside.
  3. In a small bowl, beat eggs with 1 teaspoon of sesame oil and 1 teaspoon of regular soy sauce together. Set aside.
  4. Heat ½ tablespoon of vegetable oil in a large pan on medium-high heat. Scramble eggs until they take shape. Remove and set aside.
  5. Heat another ½ tablespoon of vegetable oil and fry tofu until edges are browned. Remove and set aside.
  6. Add another ½ tablespoon of vegetable oil, add onion, peas, carrots and garlic. Fry until onions are translucent. Push everything to the side of the pan.
  7. Add remaining oil, rice followed by remaining regular soy sauce, dark soy sauce, remaining sesame oil and butter. Toss everything together until rice is colored brown.
  8. Toss back in cooked eggs and tofu. Season with salt and pepper to taste. Serve hot and enjoy!
