Quick & Easy Jeyuk Bokkeum features thinly sliced pork shoulder stir-fried with julienned onions and carrots, and optionally chopped green cabbage. The pork is cooked halfway in oil before adding vegetables, which are cooked briefly to maintain some texture.

The sauce blends soy sauce, minced garlic, brown sugar, mirin, toasted sesame oil, Korean chili paste (gochujang), and chili powder (gochugaru), creating a spicy, slightly sweet coating that thickens during cooking. The heat level can be adjusted by changing amounts of gochujang and gochugaru.

Ingredients

Servings
  • 1.35 lb pork shoulder pre-sliced kind (or sub with 50% pork shoulder and 50% pork belly)
  • 2 teaspoon vegetable oil or any neutral tasting oil
  • ½ small onion julienned
  • 1 green onion finely chopped
  • 1 cup carrot peeled and thinly sliced

Optional:

  • ½ teaspoon sesame seeds toasted
  • 1 cup green cabbage chopped

Jeyuk bokkeum sauce:

  • 2.5 tablespoon soy sauce regular
  • 4 cloves garlic minced
  • 2 tablespoon brown sugar
  • 2 tablespoon mirin
  • 1.5 tablespoon sesame oil toasted
  • 1.5 tablespoon gochujang or 2 tablespoon for very spicy
  • 1 teaspoon gochugaru or 2 teaspoon for very spicy
  • ¼ teaspoon black pepper

Instructions

  1. In a bowl, mix sauce ingredients. Set aside.
  2. Over low medium heat in a large pan, add oil. Fry pork until only 50% cooked.
  3. Mix in onions and carrots (and optionally cabbage). Cook for 1 minute.
  4. Mix in sauce. Cook until sauce thickens slightly, uncovered. Garnish with green onions and sesame seeds. Remove off heat. Enjoy!
