Quick & Easy Kimchi Jjigae (Kimchi Stew)

Quick & Easy Kimchi Jjigae is a spicy Korean stew featuring pork belly, fermented kimchi, onions, and seasonings simmered together to develop savory, tangy flavors. The stew combines tender meat and softened kimchi in a flavorful broth with garlic, soy sauce, and red pepper flakes, garnished with sliced chili for heat. It’s traditionally served hot with steamed rice.

Description

This Kimchi Jjigae recipe brings together chopped pork belly cooked with thinly sliced onions, then combined with well-fermented kimchi and minced garlic. The mixture is cooked briefly until kimchi releases its juices, then seasoned with soy sauce, sugar, and Korean red pepper flakes (gochugaru). Water is added to create a broth that simmers uncovered for about 15 minutes, concentrating the flavors and softening the ingredients.

The resulting stew offers a balance of spicy, sour, and savory tastes, with tender pieces of pork and softened kimchi providing texture contrast. The use of sesame oil at the start adds a toasty aroma.

Typically, this stew is enjoyed hot alongside steamed rice, which helps balance its spicy and fermented depth. Sliced Korean green chili peppers add fresh heat as a garnish if desired. The quick cooking time suits everyday meals when a deeply flavored, warming stew is wanted.
