Quick & Easy Scallion Oil Noodles

Quick & Easy Scallion Oil Noodles combine cooked wheat noodles with a savory blend of dark and light soy sauce, oyster sauce, and sugar, topped with hot vegetable oil poured over chopped scallions. This technique cooks the scallions slightly while infusing the noodles with rich umami flavors. The result is a glossy, flavorful noodle dish that can be served immediately.

Description

This dish uses a sauce made from dark soy sauce, light soy sauce, oyster sauce, and sugar to create a savory-sweet coating for cooked wheat noodles. Chopped scallions are placed in a bowl, and nearly smoking hot vegetable oil is poured over them, which softens the scallions and releases their aroma.

The sauce is then warmed to dissolve sugar and combined with the noodles and scallion oil, ensuring even flavor distribution. The noodles become glossy with sauce and fragrant with scallion aroma, offering a pleasing combination of textures from tender noodles and softened scallions.

This noodle dish is served immediately after combining to preserve freshness and texture. Cooking times for noodles may vary depending on the type used.

Ingredients

Servings
  • 1 tablespoon dark soy sauce
  • 1 tablespoon soy sauce light
  • 1 tablespoon oyster sauce
  • 1 teaspoon granulated sugar
  • 1 bunch scallions about 6-8 stalks, chopped, aka green onions
  • 3 tablespoon vegetable oil high smoke-point
  • 1 lb wheat noodles cooked, of your choice

Garnish:

  • 1 teaspoon sesame oil toasted
  • sesame seeds
  • scallion additional, or green onion

Instructions

  1. In a bowl, combine together the dark soy sauce, light soy sauce, oyster sauce and granulated sugar. Give it a stir and set aside.
  2. Place the chopped scallions into a heat-safe bowl.
  3. In a small sauce pot, heat the vegetable oil until almost smoking, about 225°F/107°C.
  4. Carefully pour the hot oil over the chopped scallions (it should sizzle).
  5. Off the heat, add the soy sauce mixture into the same sauce pot (be careful, it may splatter) and stir to dissolve the sugar.
  6. Pour the soy sauce mixture over the cooked noodles and pour the scallion oil over top.
  7. Mix together with a pair of tongs, until all the noodles are coated evenly.
  8. Serve immediately.

Notes

  • Boil noodles according to package instructions before sauce preparation.
  • Adjust noodle cooking time based on noodle type and thickness.
