The noodles are blanched briefly to loosen them, while the sauce combines soy sauces, oyster sauce, sesame oil, garlic, and pepper, giving the stir-fry a savory and slightly pungent flavor.
The cooking method involves sautéing green onions and garlic in vegetable oil to release their aroma, then quickly stir-frying the greens and tofu until just softened. The noodles and sauce are then mixed in and warmed through, preserving the freshness of the vegetables and the chewiness of the noodles.
This dish serves well as a standalone vegetarian entree, delivering balanced textures and flavors with minimal fuss. It can be made with fresh or frozen udon noodles and adapted with alternative greens or sauces.
Ingredients
- 1.65 lbs Udon Noodle or fresh udon noodles, frozen
- 2 cups yu choy sum or baby gai-lan, chopped into 1 inch long segments
- 2 cups baby bok choy with ends trimmed
- 5.2 oz tofu or sliced extra-firm tofu, fried, formed into balls
- 2 green onion chopped finely
- 2 tablespoon vegetable oil or any neutral oil
Noodle Sauce
- 1 tablespoon soy sauce regular
- 1 tablespoon dark soy sauce
- 1 tbsp oyster sauce or vegetarian stir-fry sauce
- 2 cloves garlic minced
- 2 teaspoon sesame oil
- ¼ teaspoon black pepper or white pepper
Instructions
- Slice fried tofu balls into halves and set aside.
- In a small bowl, combine noodle sauce ingredients and set aside.
- Blanch frozen udon noodles in hot boiling water until loosened, about 30 seconds. Strain immediately. Set aside.
- Heat vegetable oil in a large pan on medium heat. Fry green onions and garlic until fragrant or 10 seconds.
- Toss in yu choy sum, bok choy and fried tofu balls. Cook until greens have softened, about 1-2 minutes.
- Toss in noodles with noodle sauce and mix until well combined. Serve hot and enjoy!
