Quick & Easy Vegetable Tofu Udon Stir Fry

This stir-fry combines chewy udon noodles with tender greens like yu choy sum and baby bok choy, along with slices of fried tofu. The dish is flavored by a sauce blending soy, oyster, sesame oil, and garlic, adding a savory depth. Quick cooking ensures the vegetables remain crisp yet tender, while the tofu offers a soft contrast. This recipe is practical for a satisfying vegetarian meal with familiar Asian flavors prepared efficiently in one pan.

Description

Quick & Easy Vegetable Tofu Udon Stir Fry features thick udon noodles tossed with leafy greens such as yu choy sum and baby bok choy. Fried tofu balls sliced and incorporated provide a soft texture that complements the noodles and vegetables. The noodles are blanched briefly to loosen them, while the sauce combines soy sauces, oyster sauce, sesame oil, garlic, and pepper, giving the stir-fry a savory and slightly pungent flavor.

The cooking method involves sautéing green onions and garlic in vegetable oil to release their aroma, then quickly stir-frying the greens and tofu until just softened. The noodles and sauce are then mixed in and warmed through, preserving the freshness of the vegetables and the chewiness of the noodles.

This dish serves well as a standalone vegetarian entree, delivering balanced textures and flavors with minimal fuss. It can be made with fresh or frozen udon noodles and adapted with alternative greens or sauces.
