  • ½ cup rolled oats 50 g
  • 1 cup water 236 mL
  • 2 large egg whites ⅓ cup is using from a carton

Optional (but recommended)

  • 1 Tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp salt

Instructions

  1. Blend: Place ½ cup rolled oats in a blender or food processor and blitz into a rough powder, about 10 seconds.
  2. Cook: Transfer the oats to a large microwave-safe serving bowl. Add 1 cup water, stirring to mix evenly. Microwave on high for 1½ to 2 minutes, or until the oats have absorbed the water.
  3. Stir: Add 2 large egg whites while the oats are still hot, stirring to combine. Add more water, as needed, to reach a creamy consistency to your liking. Stir in optional (but highly recommended!) 1 Tbsp brown sugar, ½ tsp cinnamon, and ¼ tsp salt.
  4. Serve: Serve warm, topped with your favorite oatmeal toppings (like sliced banana, almond butter, and berries!)

Notes

  • Food Safety: Stirring the egg whites into the hot oatmeal should "cook" the eggs to the point where they are safe to eat. If you're worried about food safety, stir the egg whites into the cooked oatmeal, then pop the bowl back in the microwave for 30 seconds.
