Description
After washing, the bok choy is blanched in boiling water for two minutes to soften slightly while maintaining texture and color. The stir-fry sauce made from oyster sauce, cornstarch, soy sauce, and water provides savory umami and helps lightly thicken the sauce to coat the vegetables. Garlic and optional dried chili peppers are fried first to infuse the oil with flavor before adding the bok choy and sauce for a quick stir-fry. The brief cooking preserves the vegetable’s crisp tenderness.

Ingredients
- 8 oz bok choy
- 5 garlic cloves
- 1 tablespoon neutral cooking oil generic cooking oil
- 1 dried chili pepper , optional
Stir fry sauce
- 1 tbsp. oyster sauce
- 1/2 tsp. cornstarch
- 3 tbsp. water
- 1 tbsp. light soy sauce low sodium
Instructions
- Wash the bok Choy and blanch in boiling water for around 2 minutes. Move out and drain. Make sure three is no extra water on the surface.
- In a small bowl, add oyster sauce, salt, cornstarch and water to make the stir-fry sauce.
- Heat up cooking oil and add chopped garlic and chili peppers into stir fry for 1 minute.
- Add blanched bok Choy to wok and stir-fry sauce. Do a quick stir fry. Transfer out and enjoy!
