Quick Garlic Roasted Carrots Recipe
Description
This recipe involves roasting carrots at 500 degrees Fahrenheit, tossing them with olive oil, sea salt, Italian seasoning, and grated or minced garlic. The carrots are spread on a large baking sheet and roasted, stirred once halfway to promote even caramelization. The result is carrots with golden, caramelized spots and tender texture. Optionally, butter or ghee is added after roasting to melt over the warm carrots for added richness.
The high temperature roasting concentrates the carrots’ natural sugars and lightly crisps the edges while keeping the centers soft. The garlic and Italian seasoning complement the sweetness, adding savory notes.

Note that oven temperatures vary; if yours runs hot, lowering to 475 degrees or watching closely is advised to avoid burning.
Ingredients
- 2 lb carrot about 12 medium carrots, cut ¾ inch thick on the diagonal
- 1 tablespoon olive oil
- ½ teaspoon sea salt
- ½ teaspoon Italian seasoning
- 2 cloves garlic grated with a Microplane or minced to a paste
- butter vegan or ghee, as needed, optional, 1 teaspoon
Instructions
- Preheat your oven to 500 degrees - see notes.
- Add the carrots to a baking sheet that is at least 13" x 18" large. If you only have smaller baking sheets, use 2 instead. Toss the carrots with the olive oil, salt, Italian seasoning and garlic and spread them out evenly on the sheet pan.
- Roast the carrots for 15 minutes, mixing the carrots around the pan halfway through cooking. If you'd like more dark caramelized spots on the carrots you can leave them in the oven for up to 5 more minutes.
- Remove the carrots from the oven and, if using, add the butter. Let it melt for 1 minute then mix it into the carrots.
Notes
- Roasting at high heat promotes caramelization and tender texture, but ovens vary; if your oven tends to run hot, consider roasting at 475°F and watch the carrots carefully near the end.
- If your oven broils only at 500°F, adjust temperature slightly to prevent burning.
