- 2 Tablespoons of extra virgin olive oil
- 1/2 cup finely minced scallions (better done in a food processor)
- 3 cloves of garlic
- 1 1/2 teaspoons of dried oregano ( divided )
- 1/2 cup of fresh basil leaves finely minced ( divided)
- 1 large can of crushed tomatoes ( not whole or diced, no salt added preferably)
- 3/4 teaspoon of salt (or to taste)
- 1/2 teaspoon of fresh cracked black pepper (or to taste)
- A pinch of red pepper flakes ( optional)
- 2 Tablespoons of freshly grated Parmesan cheese **see note
