Quick Korean Beef
Description
Quick Korean Beef combines ground beef browned thoroughly to build a rich base flavor with a sauce of soy sauce, garlic, ginger, brown sugar, chili flakes, and cornstarch as a thickener. The sauce coats the beef, creating a glossy, flavorful entrée. It’s served on hot jasmine rice and garnished with chopped green onions and sesame seeds, adding freshness and nuttiness. The dish balances sweet, salty, and mildly spicy tones with a tender yet slightly caramelized meat texture. Using lean beef reduces excess fat, making the dish less oily.
The recipe advises tasting the sauce before final cooking to adjust saltiness and recommends fresh garlic and ginger when possible for best flavor. Fat can be discarded after browning if using beef with higher fat. The sugar can be substituted with honey if preferred. Browning the beef well is essential for flavor development.
Ingredients
- 1/4 cup soy sauce low sodium
- 1/4 teaspoon chili pepper flakes
- 1 1/2 tablespoon brown sugar
- 3 garlic minced, cloves
- 1 teaspoon ginger or 1/2 teaspoon powdered ginger, freshly grated
- 1 teaspoon corn starch
- 2 tablespoons vegetable oil
- 1 lb ground beef I used 93% lean
- 4 cups rice cooked
- 3 green onions chopped
- 1 tablespoon sesame seeds
Instructions
- In a small bowl, mix soy sauce, pepper flakes, brown sugar, garlic, ginger and corn starch. Set aside.
- Heat vegetable oil in a pan over medium heat. Saute ground beef until brown and no pink left. Add the sauce and cook for an additional 5 minutes.
- Meanwhile, heat the rice.
- Serve cooked Korean beef over Jasmine rice and top with green onions and sesame seeds.
Notes
- Taste the sauce mixture before cooking; add more soy sauce if a saltier flavor is desired.
- Use lean ground beef and drain excess fat after browning if needed to avoid greasiness.
- Fresh garlic and ginger enhance the flavor, but powdered forms can be used if fresh are unavailable.
- Brown the beef thoroughly without drying it out to develop the best flavor.
- Sugar can be replaced with honey for a different sweetness profile.
- Recipe can be doubled or tripled to serve larger groups.
