Quick Pickled Cucumber

Quick Pickled Cucumber uses thinly sliced cucumber soaked in a seasoned vinegar brine with salt, sugar, black pepper, and fresh dill. The quick pickle process allows immediate serving or better flavor development after several hours in the fridge. The result is a crisp, tangy, and aromatic pickle that adds brightness and acidity as a side or topping.

Description

This recipe prepares the pickling liquid by dissolving salt and sugar in apple cider or white wine vinegar with black pepper and finely chopped dill. Placing the cucumber slices submerged in the brine causes them to soften slightly while retaining crunch. Shaking the jar ensures even distribution of flavors.

The pickles can be served right away for a fresh, crisp taste, or refrigerated for hours to develop more pronounced vinegary sharpness and herb aroma. This quick pickling avoids fermentation, focusing on fresh bright flavors that complement sandwiches, salads, or snacks.

These pickles will keep refrigerated for up to a week but are not suitable for freezing. The recipe notes that nutritional information is approximate.

Ingredients

Servings
  • 100 ml apple cider vinegar (or white wine vinegar)
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 5 twists black pepper or to taste
  • 1 tablespoon dill chopped finely
  • ½ cucumber sliced thinly

Instructions

  1. Take an old clean jam jar and add the vinegar, salt, sugar, black pepper and dill. Screw on the lid and shake until the salt and sugar have dissolved.
  2. Fill the jar with the sliced cucumber. Top up with a little extra vinegar, if necessary, so the cucumber is completely submerged under the vinegar.
  3. Screw on the lid and shake again.
  4. Either serve straight away or leave for a few hours in the fridge before serving for an even better taste!

Notes

  • Keep the pickled cucumbers refrigerated and consume within one week for best freshness.
  • Quick pickles can be served immediately or chilled for stronger flavor development.
  • Do not freeze pickles as texture and flavor will be affected.
  • Use apple cider or white wine vinegar based on preference.
