Description

This recipe combines white vinegar, water, sugar, and sea salt, warming the mixture to dissolve the solids and infuse flavor. Finely sliced red onions are placed in a jar and covered with the cooled pickling liquid, then refrigerated. The acid from the vinegar softens the onion’s sharpness, while sugar balances the tartness with mild sweetness.

Pickling in this way produces onions that are crisp yet tender, with a bright flavor suitable for garnishing tacos, salads, sandwiches, or grilled meats. The onions are ready in a short time but develop stronger flavor if left for longer periods, up to 24 hours.

Optional ingredients like peppercorns, jalapeños, or various seeds can be added to customize the spice and aroma. Using a mandolin to slice the onions thinly increases the surface area for pickling.

  • 3 red onion finely sliced
  • 500 ml water
  • 250 ml vinegar white
  • 3 tablespoon sugar
  • 1 teaspoon salt sea salt

Instructions

  1. Place the vinegar, water, salt and sugar in a small saucepan on the hob and bring to a simmer. Simmer for 30-60 seconds, stirring. Turn off the heat and let this cool completely.
  2. Put the onions in a jar and pour over the liquid. Put in the fridge for at least 15 minutes.

Notes

  • Slicing onions very thin using a sharp knife or mandolin improves texture and flavor absorption.
  • Customize the pickling liquid with spices such as peppercorns, jalapeños, cumin seeds, fennel seeds, garlic cloves, or a bay leaf to add aroma and heat.
  • Although ready after 15 minutes, letting the onions marinate for 24 hours gives a stronger pickled flavor.
