Quick Spam Fried Rice

Quick Spam Fried Rice combines diced Spam, scrambled eggs, peas, corn, and green onion with flavorful soy, oyster, and sesame sauces. The ingredients are stir-fried so the rice separates into fluffy grains with crispy bits of Spam and tender eggs. This dish balances savory and slightly sweet notes from the sauce and vegetables, making it a practical meal that uses leftover rice and easily accessible ingredients for a satisfying, homestyle fried rice.

Description

Quick Spam Fried Rice features diced Spam cooked until slightly crisp and browned, combined with scrambled eggs, green onions, peas, and corn. The sauce, a blend of soy sauce, oyster sauce, sesame oil, and white pepper, adds savory depth and a hint of sweetness. The rice is tossed in the wok to separate the grains and evenly coat them with the sauce, yielding a meal with contrasting textures: the chewiness of Spam pieces, softness of eggs, and tender vegetables.

This fried rice works well as a standalone quick dinner or a side dish alongside steamed vegetables or a simple soup. It is an efficient way to use leftover rice and pantry staples for a flavorful home-cooked meal.

The method suggests preparing the sauce separately and adding ingredients stepwise to avoid overcooking any component. Using low-sodium Spam helps control the saltiness, and stirring constantly ensures even heat distribution.

Ingredients

Servings

For fried rice

  • 2 tbsp neutral cooking oil divided, generic cooking oil
  • 3 egg beaten
  • 12 oz (340 g) SPAM low sodium preferred
  • 2 cloves garlic minced
  • 2 green onion chopped
  • 1/2 cup (100 g) peas thawed, frozen
  • 1/2 cup (100 g) corn kernel thawed, frozen
  • 4 cup (730 g) cooked rice leftover

For fried rice sauce

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp sesame oil
  • 1/4 tsp white pepper or black pepper

Instructions

  1. To make the fried rice sauce, mix all the ingredients in a small bowl and set aside.
  2. Heat a tablespoon of oil in a wok or a large skillet over med-high heat. Add the beaten eggs and stir until they are half cooked (still slightly wet). Transfer the eggs to a plate and set aside.
  3. Heat another tablespoon of oil, add Spam pieces and fry until they are crisp and slightly browned, about 2-3 minutes. Add garlic, green onion and stir fry for 1 minute.
  4. Add peas and corn and continue to fry for 30 seconds. Add rice and toss with spam and vegetables until rice grains are separated and well incorporated.
  5. Pour the sauce over and toss well with fried rice. Add the reserved scramble egg and continue to toss to heat through. Serve hot.
