Quinoa Salad with Honey Garlic Sriracha Chicken

This recipe combines baked chicken breasts coated in a honey garlic sriracha sauce with a bed of quinoa and fresh spinach. The chicken has a sticky, tangy glaze from the sauce, while the quinoa cooked in water offers a fluffy, nutty base. Mixed with fresh spinach, it creates a well-rounded meal with contrasting textures. The sauce adds a balance of sweetness, garlic, and a spicy kick that makes the dish interesting and flavorful. It can be served warm and is suitable for lunches or dinners that benefit from a protein-rich, flavorful salad.

Description

Quinoa Salad with Honey Garlic Sriracha Chicken brings together tender chicken breasts baked in a sticky sauce made from honey, tamari, garlic, sriracha, and thickened slightly with flour. The quinoa is cooked separately and combined with fresh spinach to form a light but filling base. The chicken is baked in the sauce until cooked through, absorbing the sweet and spicy flavors. The finished dish highlights the contrast between the sticky sauced chicken and the fluffy, mild quinoa with fresh spinach. Leftover sauce is drizzled on top for extra flavor. This method keeps components distinct while allowing the bold sauce to tie everything together.

The sauce provides a balance of sweet honey, umami tamari, and a spicy sriracha heat with garlic notes. Baking the chicken in the sauce lets it soak in those flavors, while the quinoa provides a mild, slightly nutty grain that complements the rich protein. The addition of spinach adds freshness and a tender leafy texture, keeping the salad vibrant and not too heavy.

This dish suits meal prep well as components can be made ahead and combined when ready to eat. The recipe suggests serving with fruit for added brightness if desired. The portion size and sauce amount can be adjusted, affecting the caloric content according to preference. Overall, it’s a balanced meal combining protein, grains, greens, and a flavorful sauce.

Ingredients

Servings

Honey Garlic Sriracha Sauce

  • 1/2 cup honey more or less to taste
  • 2-3 tbsp tamari sauce more or less to taste
  • 3 cloves garlic minced
  • 1 tbsp sriracha more or less to taste
  • 1 tbsp all-purpose flour to thicken

Quinoa Salad and Chicken

  • 4 chicken breast small or two large ones cut in half
  • 1.5 cups quinoa
  • 3 cups water
  • 1 bag spinach

Instructions

  1. Heat up the oven to 400F.
  2. On low heat on the stovetop, mix together your honey, tamari sauce, minced garlic, and flour.
  3. While stirring the honey garlic sriracha sauce occasionally, get a second pot on the stove and place your quinoa and water on medium heat. Your quinoa should take around 15-20 minutes to cook, stir it occasionally.
  4. Once your honey garlic sriracha sauce is throughly mixed together, set aside 1/3 of it and pour 2/3 onto your chicken (in a parchment paper envelop) and bake in the oven for 30 minutes or until your chicken is done.
  5. Once your quinoa is done and your chicken is baking, mix your spinach and quinoa together in your lunch container.
  6. Once your chicken is done, slice it up and place it on top of your quinoa and spinach. Portion out the remainder of the honey garlic sriracha sauce to each serving.
  7. Optional: Serve with fruit!

Notes

  • Adjust the amount of honey and sriracha in the sauce to suit your taste for sweetness and spiciness.
  • The amount of sauce drizzled on the finished dish will affect the calorie content.
  • Using parchment paper to bake the chicken helps keep the sauce contained and chicken moist.
  • Serve warm for best flavor and texture.
