  • 1 small yellow onion finely diced
  • 5 pieces button mushrooms finely diced
  • ¼ cup chives minced
  • ¾ cup all-purpose flour
  • ¼ teaspoon red pepper flakes optional
  • 1 teaspoon salt
  • 3 tablespoons plant-based milk unsweetened, plain milk
  • 1 tablespoon lemon juice
  • cooking oil

Instructions

  1. In a large bowl, mix together the quinoa, onion, mushrooms, chives, flour, red pepper flakes, and salt. Mix until well-combined and thick.
  2. Add the lemon juice and non-dairy milk and mix thoroughly.
  3. Roll into small 1-inch balls, slightly flatten, and put on a plate put in the refrigerator for 15 minutes.
  4. Heat the oil in a pan on medium heat and cook the tots until golden brown on both sides, about 5 minutes a side
