Quinoa with Mushrooms and Feta

Ingredients

  • 2 cups cooked quinoa (see note)
  • 8 oz fresh shiitake mushrooms
  • 1 tbsp butter
  • ½ cup crumbled Feta cheese
  • 1 tbsp thyme leaves

Instructions

  1. Wash the mushrooms, discard the stems and cut the tops into large pieces.
  2. Melt butter in a large skillet over medium high heat, and fry the mushrooms for about 4-5 minutes, until they start to brown.
  3. Add the quinoa, feta and thyme leaves and stir everything together. Taste for salt. (You may not need any because feta is fairly salty).

  • Note: You'll have better results if you cook quinoa in vegetable or chicken broth. However, you may also boil it in slightly salted water. You need about ¾ cup of uncooked quinoa in this recipe.
