Radish Cucumber Salad

Easy summer salad that is creamy, full of flavor, and refreshing.

Ingredients
- 1 bunch Radishes (12-15)
- 2 Small cucumbers (or half a large English cucumber)
- 1 bunch green onions
- 1 tbsp sour cream
- ¼ tsp salt or to taste
- black pepper, to taste
Instructions
- Wash and chop the cucumbers and radishes into half-moons. Transfer to a salad bowl.
- Chop the green onions and add to the cucumbers and radishes.
- Add sour cream and salt and pepper.
- Mix well ensuring the sour cream is well-distributed without any clumps. Serve right away.
Notes
- - It is best to serve the salad right away. As soon as you add the sour cream and the salt to the vegetables they will start producing juice and after a while will become soggy. To prepare ahead, chop everything and set aside. Add the sour cream and seasonings right before serving.
