Raggmunk

Raggmunk is a Swedish dish made from grated potatoes mixed with a dough of flour and milk, and fried in butter served with fried bacon and lingonberry jam.

Ingredients

Servings
  • 2 cups milk
  • cup flour
  • 2 teaspoons salt
  • 1 egg
  • 2 lb potato peeled and grated
  • 16 oz. Bacon
  • lingonberry jam
  • butter (for cooking)

Equipment

  • baking dish

Instructions

  1. Whisk together the milk and flour in a bowl.
  2. Add the salt, eggs and potatoes. Mix well.
  3. Preheat the oven to a temperature of 210 F (100°C).
  4. Heat a small knob of butter in a pan and, most importantly, prepare one raggmunk at a time.
  5. Roll out ¼ of the mixture into a pancake and, using a spatula, even out the surface so that the grated potatoes are not in a pile.
  6. Fry over medium heat without burning for about 4 minutes per side until it has a nice golden color and a crisp edge.
  7. Gradually place the raggmunk in a large baking dish and keep them warm in the oven.
  8. In a skillet, heat the bacon over medium heat until crisp. Drain it.
  9. Serve the raggmunk hot with fried bacon and lingonberry jam.
