Rainbow Donuts
Description
Rainbow Donuts combine a tender, lightly spiced donut base with a visually striking multicolored glaze. The batter, enriched with sour cream and butter, gives a moist crumb, and the optional allspice adds subtle warmth. After baking the donuts in pans, they are cooled and dipped carefully in a mixture of confectioners sugar and milk that is divided and tinted with different colors. The dipping and rotating technique helps keep the colors separate on the glazed donut tops, creating a distinctive rainbow striped effect. These donuts present both an appealing look and a soft, sweet flavor from the vanilla and sugar.
This recipe works well for a fun homemade treat and can be adapted with whole milk yogurt instead of sour cream if desired. Paying attention to flour measurement helps maintain the ideal batter consistency so the donuts bake properly with a tender texture. The donut glaze should be applied in thin layers with a dipping method to achieve clean lines of color on each donut's surface.
Ingredients
For the Donuts
- 1.25 cup all-purpose flour
- 1/3 cup sour cream
- 1/3 cup milk
- 1 1/4 tsp baking powder
- 1 pinch allspice Optional
- 2 tbs butter melted
- 1/3 cup sugar
- 1 tsp vanilla
For the Glaze
- 1 lb confectioners sugar
- 3-4 tbs milk
- 3-8 drops Food Coloring
Instructions
For the Donuts:
- Add the ingredients to a large bowl and mix until just combined.
- Pipe into butter and floured donut pans
- Bake about 10 minutes at 350F, allow to cool on a wire rack.
For the Glaze
- Mix milk into powdered sugar.
- Add about 2 tbs of the mixture to several bowls and tint with various intensities of the “colors of the rainbow."
- Dip the donuts — carefully — into the mixture to achieve the desired, rainbow color. Repeat.
- Enjoy!
Notes
- Measure flour by weighing or fluffing and leveling with a knife to avoid using too much flour, which affects donut texture.
- Whole milk yogurt can substitute for sour cream without noticeable difference in the donuts.
- Apply glaze by spooning thin layers of each color and dipping donuts to maintain distinct stripes rather than mixing colors.
- Rotate donuts gently (without twisting) when dipping and tilt upward when lifting to keep glaze lines vertical and separated.
